the chocolate crackle gets more crack-like


here is a post for chocolate crackles that anyone with a mouth and a need for deliciousness must read. crackles contain the essentials of life: coconut in two forms, cocoa for strength and general hipness; and the crunch of a thousand rice puffs. somehow, no doubt in violation of some natural law, i have made them BETTER.

4c puffed rice cereal
0.5c icing sugar, sifted (or blitz some raw sugar in an electric spice/coffee grinder for 10 seconds)
1.5c desiccated coconut, toasted on low- medium til light golden brown in a dry frying pan
200g coconut oil
0.25c cocoa powder
1-1.5c raisins and pitted prunes, finely chopped 
150g dark chocolate, melted
0.5tsp salt
grated rind of one orange

in a large bowl, mix the rice cereal, sugar, cocoa and coconut. gently mix in the chopped fruit.

in a medium bowl, melt the coconut oil and dark chocolate in the microwave (60-90 seconds). add in the rind and salt. pour this into dry ingredients, stirring gently til well combined. spoon into a loaf or brownie tin (remember: silicone rocks!) and press firmly to level and refrigerate until firm, then slice into squares.

all you need is cinnamon granola



someone made this on tv last night. my mouth was half full of dinner, yet i NEEDED to make this RIGHT NOW. and since the person who told me about date syrup isn't forthcoming in reminding me what the hell i was supposed to be using it for, this is date syrup's first outing chez loulou. looks like i'll be making more later in the week- half of it's gone already! enjoy :)

2c rolled oats 
1.5c seeds and roughly chopped nuts (eg almonds, walnuts, pepitas, sunflower seeds, sesame seeds)

1c unsweetened coconut flakes (or coarsely shredded)
2Tbs ground cinnamon 
0.25tsp sea salt 

1c raisins or other dried fruit (cherries, chopped apple or apricots)
0.75c date syrup (buy this from a Middle Eastern grocer, or substitute 0.5c maple syrup or agave and 0.3c pitted dates blended til smooth with 3Tbs warm water)
3Tbs coconut oil, melted (or grapeseed, macadamia oil)


preheat oven to 150C.

mix all the dry ingredients except for the fruit together in a large bowl. add the date syrup or maple/date mix and stir til the dry ingredients are well coated.

line a baking tray with a silicone baking mat, or lightly greased baking paper or foil. spread the mix evenly and bake for 15 minutes; carefully stir the fruit in and bake a further 15 minutes. allow to cool (not completely, just til warm) and break into clusters; cool completely and store in airtight containers.

serve with grated apple and coconut yoghurt!

it's tom kha tofu!


this has got to be one of my top ten meals of all time: hot, sweet, sour, salty and umami galore, fresh and quick and comforting. magic.

i think the proportions are very flexible, based on taste and what you have available. a litre of coconut milk makes a great soup, but less can be used without problems.

1L coconut milk
200ml water 
3cm knob of galangal or ginger (preferably young)
1 stalk lemongrass (cut and keep the top half for tea; chop the bottom half into 3cm lengths for the soup)
4 kaffir lime leaves
2-3 red chillis
3-4 tsp black/fried chilli paste
1 large piece kombu seaweed

300g firm tofu
1c mushrooms, quartered (tinned straw mushrooms are nice, too)
4-5tbs soy sauce
2tbs sugar (palm or brown sugar is best)
1 bunch bok choy or other asian greens
1 lime, juice and zest
bunch of coriander
jasmine rice to serve

put rice on to cook.

on low-medium heat, gently simmer coconut milk and water in a large saucepan. add galangal, lemongrass, lime leaves, half the chillis (you can always add more later!), kombu and chilli paste. stir and heat for 5-10 minutes. remove kombu and discard.

add tofu, mushrooms, soy sauce and sugar. cook for a further 10 minutes on medium heat without boiling. after the first 5 minutes, add the greens in to cook. finely grate lime zest into the saucepan. adjust seasoning, then remove from heat. 

serve in bowls: add a teaspoon of lime juice to each, and top with a few stalks of lightly chopped coriander.

massaman curry



this curry is AMAZING; another one i can strike off the list of must haves at a thai restaurant-cos  i can DIM (that’s right- do it myself)!

this part could be made up in bulk and stored in an airtight container for another time (if you do this, use about 2 heaped teaspoons of powder in your recipe). buy the following ingredients pre-ground, or use a coffee grinder to grind to a powder:
3 bay leaves
2tsp turmeric powder
1tsp coriander seeds
1tsp cumin seeds
0.5tsp pepper
0.25tsp cardamom seeds
half a cinnamon stick

set aside and gather all other ingredients.

2Tbs coconut oil or other vegetable oil
1 small onion, finely sliced
1Tbs fresh ginger, finely grated
3 cloves garlic, crushed
1 small red chilli, finely sliced, or 0.5tsp hot chilli powder

0.5c vegetable stock or water
0.5 stalk lemongrass, finely minced, or 2-3 Tbs frozen/dried lemongrass
0.25c unsalted dry-roasted peanuts (+ handful more to serve)
1tbs tamarind paste (lime or lemon juice can be used instead)
1tsp soy sauce
1Tbs palm sugar or brown sugar
400ml can coconut cream

200g tofu puffs, firm tofu or tvp chunks (i used frozen vegetarian beef chunks from an asian grocer- great! this place is awesome- lots of vegan and asian grocers stock their products if you can't get to footscrazy)
1-2 medium potatoes, peeled and cut into 2cm thick chunks
1 small red capsicum, in 1cm slices
green veggies cut into 2cm pieces, eg bok choy, broccoli

heat a large saucepan (8L) over medium-high heat. heat oil and add onion, ginger, garlic, and chili, cook for 1 minute. add the stock/water plus the lemongrass, ground spices, peanuts, tamarind (or lemon/lime juice), soy sauce, and sugar. bring to a gentle boil.

add tofu, coconut cream and potatoes; add more water/stock if too thick. stir and bring back up to a boil. reduce heat to low. cook for 10 minutes, then add capsicum and green veggies (add bok choy 2 minutes before end). adjust seasoning (more soy sauce, sugar, tamarind, chilli or coconut cream to taste). top with coarsely chopped coriander and extra peanuts, or fried shallots, and serve with steamed jasmine rice and/or pan fried roti bread.

chocolate. crackles.


go crazy! these involve little heat (30 second in the microwave) and simple ingredients. i couldn't ask for more from a summer dessert that can take me back to my childhood in three seconds. not being made with copha (ick – hydrogenated freakishness!), these won’t stay super solid at room temperature (above 20 degrees) but are way tastier and healthier.

4c puffed rice cereal
0.75c icing sugar, sifted
1.5c desiccated coconut, toasted til light golden brown in a dry frying pan
250g coconut oil
0.25c cocoa powder

in a large bowl, mix the rice cereal, sugar, cocoa and coconut.

in a medium bowl, melt the coconut oil in the microwave (30-60 seconds). pour oil into dry ingredients, stirring gently til well combined. line muffin trays with patty cases, then poon mixture into cases and refrigerate until firm.

tapioca pudding


so good for breakfast!

0.5c tapioca pearls (small)
1c water
0.5tsp salt
0.5c coconut cream
3Tbs brown sugar
cinnamon and grated orange zest to taste- or other flavourings (scraped vanilla pod, rose water, fresh or tinned pinapple or lychees)

in a small saucepan on low-medium, heat the tapioca, water and salt. the mixture will thicken fairly quickly, so keep stirring gently until the pearls start going translucent. stir in the sugar and coconut cream, and keep stirring until the pearls are almost fully translucent. remove from heat and gently stir in flavourings of choice.

black sticky rice and coconut pudding


my favourite winter breakfast; a hearty, decadent, tropical desserty dish that makes a dreary morning special. this is rich, and makes a fairly big batch- at least a week's worth of brekkies!

rice
2c black glutinous rice
150g palm sugar (shaved or grated)- brown or raw sugar will suffice
1 orange, finely grated zest
200ml coconut cream
0.5tsp salt

custard  
800ml coconut cream
2tsp agar agar powder
2Tbs arrowroot powder
0.25c water
50g palm or other sugar
1tsp salt


if possible, soak the rice overnight in 1L water. drain half the water; bring to the boil, reduce heat to medium, stirring and adding water as needed (as for risotto). it will take approx 40 minutes to cook; be patient and stir every 5 minutes until rice begins to be purple and starting to thicken. taste rice for desired consistency (should be a little al dente but cooked).



remove from heat; stir in coconut cream, sugar, orange zest and salt. pour into individual ramekins or a 25cm round pudding basin or baking dish, smoothing top with spatula.


on low, heat the coconut cream in a small saucepan; add sugar and stir to dissolve. in a small bowl, mix arrowroot and agar agar with water to form a paste. gently whisk this into the coconut cream until it thickens into a smooth custard. remove from the heat and pour gently over the rice to form a 2cm thick custard. cool in fridge or eat warm.

it's daal, darl

the lentil plant

i love lentils: yummy, cheap and fabulously flexible, i always have a few different types in the cupboard. this daal is quick and scrumptious, especially served with papaddums (microwaved for maximum convenience!). proportions can be changed, and ingredients omitted to taste and dietary requirements. this serves 4-6.

2tbs coconut (or other) oil
3 cloves garlic, minced or crushed
3cm ginger, finely grated
3-4 tbs mild curry powder
1c red lentils, uncooked
1c coconut milk or cream
3c water or stock
1 medium zucchini, coarsely shredded
2 medium carrots, coarsely shredded
salt and pepper or chilli to taste
optional: coarsely chopped coriander, steamed basmati rice and papaddums to serve

heat the oil in a medium saucepan; fry the garlic, ginger and curry powder for a minute on medium heat. stir in the lentils. add the coconut milk/cream and stock, cook on low for 10 minutes stirring occasionally, adding a little more water if it gets too thick. 

stir in shredded zucchini and carrot, cook for a further 5-10 minutes.

bliss balls


1.5c pitted dates
.5c sultanas
.5c almonds, soaked overnight (this is my health preference, but is optional)
2tbs coconut oil, melted
3tbs cocoa
.75c dessicated coconut
1tbs coconut flour

process half the dates and half the almonds in a food processor. gradually add in the rest of the ingredients, and pulse until combined (the almonds will be about the size of sesame seeds). roll into balls and refrigerate; makes approx 20.

D thought these were chocolate truffles, and ate four before being told they contained dried fruit :) :)

bliss balls are forgiving to make, and infinitely variable: substitute in some portion of tahini; sesame, sunflower or poppy seeds; dried apples or cranberries...
